Breakfast Pizza Wrap 

This is one of my favorite savory breakfasts. I use a Damascus Bakeries Roll-Up Wrap (the square one) as the base, use your favorite!

Ingredients:

1 Damascus Bakeries Roll-Up Wrap

2 tablespoons marinara sauce

½–1 cup shredded cheddar cheese

Eggs

2 eggs

Cooking spray (Pam or similar)

¼ teaspoon salt, or to taste

Black pepper, to taste

¼ teaspoon garlic powder

¼ teaspoon za’atar (optional)


Toppings

1 teaspoon pesto, dotted, (I love the Tuscanni brand)

½ teaspoon hot sauce, drizzled

¼ red onion, thinly sliced

2 tablespoons fresh cilantro, chopped

1 handful fresh spinach or arugula

Avocado chunks and/or guacamole, to taste

Fresh cherry or grape tomatoes, halved (mixed colors if you have them)


Instructions

Bake the wrap

Preheat a toaster oven or Betty Crocker-style oven.

Place the wrap on foil or a baking tray. Spread 2 tablespoons marinara evenly over the wrap and top with ½–1 cup shredded cheddar cheese.

Bake for 5–10 minutes, until the cheese is melted and the edges are lightly crisped.

Cook the eggs

While the wrap bakes, heat a frying pan over medium heat and lightly spray with cooking spray.

Crack in the eggs (checking for blood, obviously). Season with salt, pepper, garlic powder, and za’atar.

Cook until the whites are just set and the yolks are still jammy. Flip briefly if needed, then turn off the heat.

Assemble

Remove the wrap from the oven.

Dot with pesto, drizzle with hot sauce, and place the eggs on top.


Finish

Scatter on red onion, cilantro, spinach or arugula, avocado or guacamole, and fresh tomatoes.

Cut, fold, or eat open-face.
