Spicy and Sticky Date Chicken

I really love date syrup. Not because it's healthier or has less sugar than other sweeteners (it doesn't), I love its rich, dark color and flavor. It can be challenging to work with if you are new to using it because you can't just substitute it for honey or maple syrup. But once you get it right, it is the perfect punch of umami and sweet. This is a perfect winner, chicken dinner when you are in a rush and you still want to serve something absolutely stupendous.

Enjoy this with a side of rice, potatoes or even corn on the cob. I like serving it with a red cabbage salad (See my recipe)

Spicy and Sticky Date Chicken

Spicy and Sticky Date Chicken Ingredients:

Chicken (4 thighs and 12 drumsticks)
1/4 cup of Ketchup
1/4 cup of date syrup
3 tbsp of soy sauce
1 tsp of sriracha
2 tbsp of apple cider vinegar
1 tbsp of spicy brown mustard 
4 cloves of garlic
1 cube sized piece of ginger
Salt 
Paprika

Instructions 

Preheat oven to 400F.
 
1. Lay the chicken on a real baking sheet. 
2. ⁠Sprinkle salt and paprika over the chicken.
3. ⁠Drizzle or spray olive oil over the spiced chicken.
4. ⁠Mix together ketchup, date syrup, soy sauce, apple cider vinegar, garlic, sriracha and spicy brown mustard in a bowl.
5. ⁠Pour the ketchup mixture over the chicken. 
6. ⁠With cloves rub in the mixture. Let it marinate for 1 hour. 
7. ⁠Place the thighs upside down. 
8. ⁠Cook the chicken for 30 minutes on each side.
